All the ingredients in the recipes which follow use non-alcoholic or de-alcoholised lagers, wines, ciders, vermouths, Champaigns. Pastis is an aniseed drink, which tastes similar to Pernod/Ouzo/Ricard.

Pour 500ml soya milk, 2 tablespoons apple and pear concentrate and one tablespoon lemon juice into a shaker.

Ice add one third passionfruit nectar, one third apricot nectar, one third plum juice and a dash of soda. Serve with lemon, cherry, straw and stirrer.

Add one third orange juice, one third mango juice and one third guava juice.
Leave to stand for 2 minutes.

Tonic water + white grape juice.
Passionfruit nectar + soda water.
Three quarters cherry nectar + one quarter red grape juice.
Three quarters white grape juice + one quarter apricot nectar.
Three quarters plum juice + one quarter white grape juice.
Serve each one in a tall glass with ice and fruit garnishes, a straw and stirrer.
